Kristen also shows how to make an impressive (but not difficult) potato croquette (recipe below) 🥔 Ingredients: 2 cups leftover mashed potatoes, ideally made from russet potato (or freshly mashed and chilled) ½ cup fresh corn off the cob 1 tsp chopped rosemary 1 tsp chopped thyme 1 T chopped parsley 2 T all purpose flour ½ tsp garlic powder 3 T chopped caramelized onion (optional) ½ cup grated white cheddar cheese ¼ low moisture grated mozzarella salt & white (or black) pepper to taste zest of 1 lemon Directions; Mix everything together Hand form into discs – any desired size or shape. They do not need to be perfect. pro tip – freeze these before breading for easier handling. Not necessary though. Use the three step breading method to bread each disc THREE STEP BREADING Egg wash - 3 eggs and 3 T water mixed together Seasoned flour - 1 cup all purpose flour seasoned with 2 tsp salt 4 cups fine panko bread crumbs – crush between your hands or use a food processer to resemble medium grain sand mixed with 1 T kosher salt or pink salt, a few turns of black pepper. Fry in canola, vegetable, or grapeseed oil at 350 degrees F until golden, drain excess oil on paper towel, lightly season with kosher salt immediately. GARNISH – any or all of this is optional but certainly elevates the dish whipped crème fraiche or plain sour cream or Greek yogurt if you are looking for a “healthier” alternative to go along with your airfryer. Finely chopped chives Lots of caviar or trout roe – or neither Maldon salt or sea salt of your choosing Drizzle of honey
